    Prepare the Fingerling Potatoes

    Preheat the oven to 400°F (200°C). Wash and scrub the fingerling potatoes, then cut them in half lengthwise. Toss them with olive oil, salt, and black pepper, and place them on a baking sheet.

    Roast the Potatoes

    Roast the fingerling potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and tender, turning them halfway through.

    Prepare the Branzino

    While the potatoes are roasting, prepare the branzino. Rub the fish with olive oil, salt, and black pepper, making sure to season the cavity as well.

    Sear the Branzino

    Heat a large skillet over medium-high heat. Add a splash of olive oil and sear the branzino for about 4-5 minutes on each side until the skin is crispy and the flesh is opaque.

    Make Salsa Verde

    In a bowl, combine the finely chopped parsley, capers, minced garlic, lemon juice, and olive oil. Mix well to combine.

    Make Pesto alla Trapanese

    In a food processor, combine basil leaves, blanched almonds, minced garlic, grated Parmesan cheese, and olive oil. Blend until smooth and creamy.

    Serve

    Plate the roasted fingerling potatoes alongside the seared branzino. Drizzle with salsa verde and pesto alla trapanese before serving.
