1. Prepare the Chicken
Pound the chicken breasts to an even thickness using a meat mallet. Season with salt and pepper.
2. Breading Process
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of bread crumbs and parmesan cheese. Dip each chicken breast first in flour, then in egg, and finally in the bread crumb mixture, pressing to adhere.
3. Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes per side, until golden brown and cooked through. Remove and drain on paper towels.
4. Prepare the Salad
In a mixing bowl, combine shaved artichoke hearts and mixed greens. Drizzle with black truffle oil and toss gently to coat. Season with salt and pepper.
5. Make Chicken Jus
In the same skillet used for frying, add chicken broth and simmer, scraping up any browned bits. Reduce slightly and season to taste.
6. Serve
Plate the chicken milanese alongside the artichoke salad and drizzle the chicken jus over the top.
