Prepare the Artichokes
Trim the stems of the artichokes and remove the tough outer leaves. Cut the artichokes into quarters and remove the fuzzy choke from the center. Soak the artichoke pieces in a bowl of water with lemon juice to prevent browning.

Prepare the Breading
In a medium bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.

Coat the Artichokes
Remove the artichokes from the lemon water and pat them dry. Dredge the artichoke quarters in the flour mixture until well coated.

Fry the Artichokes
Carefully place the coated artichokes into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes per batch.

Drain and Serve
Remove the fried artichokes from the oil and drain on paper towels. Serve hot with a sprinkle of salt and a wedge of lemon on the side.
