Preparation and Cooking Instructions

    Marinate the Steak

    In a bowl, combine black garlic, koji, olive oil, salt, and black pepper. Mix well to create a marinade.

    Prepare the Skirt Steak

    Place the skirt steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 2 hours, or overnight for better flavor.

    Prepare the Vegetables

    While the steak is marinating, prepare the romanesco cauliflower by cutting it into florets. Slice the cipollini onions and shishito peppers.

    Cook the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cipollini onions and cook until caramelized. Add the romanesco florets and shishito peppers and sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.

    Cook the Steak

    Preheat a grill or grill pan over high heat. Remove the steak from the marinade, letting any excess drip off. Grill the steak for about 3-4 minutes per side for medium-rare, or until desired doneness.

    Prepare the Sauce

    In a small saucepan, combine the gooseberries and balsamic vinegar. Cook over medium heat until the gooseberries burst and the mixture thickens slightly, about 5-7 minutes.

    Slice the skirt steak against the grain. Arrange the sautéed vegetables on a platter, top with sliced steak, and drizzle with the gooseberry sauce.
