Marinate the Lamb

In a large bowl, combine the cubed lamb, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to coat the lamb evenly. Cover and refrigerate for at least 1 hour, or preferably overnight.

Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat a grill or grill pan over medium-high heat.

Assemble the Kebabs

Thread the marinated lamb onto the skewers, packing them tightly but leaving a little space between each piece.

Grill the Kebabs

Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the lamb is nicely charred and cooked to your desired doneness.

Serve

Remove the kebabs from the grill and let them rest for a few minutes. Serve with butternut hummus, herb salad, barberries, and a drizzle of pomegranate molasses.
