Method

Preparing the Skirt Steak

    Marinate the Steak

    In a bowl, combine the skirt steak with Italian salsa verde, salt, and black pepper. Marinate for at least 30 minutes, preferably 2 hours in the refrigerator.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Remove steak from marinade and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest before slicing.

Poaching the Eggs

    Boil Water

    In a pot, bring water to a gentle simmer and add white vinegar.

    Poach the Eggs

    Crack each egg into a small bowl and gently slide into the simmering water. Cook for about 3-4 minutes until whites are set but yolks are runny. Remove with a slotted spoon.

Preparing the Focaccia Rounds

    Toast the Focaccia

    Drizzle the focaccia slices with olive oil and toast on a skillet or under a broiler until golden brown.

Making Gremolata Hollandaise

    Prepare Hollandaise

    In a heatproof bowl, whisk together egg yolks and lemon juice until frothy. Place over a pot of simmering water (double boiler) and whisk in melted butter slowly until thickened. Stir in garlic, parsley, and lemon zest.

Assembly

    Plate the Dish

    On each plate, place a toasted focaccia round, top with sliced skirt steak, add poached eggs, and drizzle with gremolata hollandaise.
