Prepare the Broth
In a saucepan, heat the vegetable broth over medium heat. Keep it warm on low heat.

Sauté the Aromatics
In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic and cook for another minute until fragrant.

Cook the Farro
Add the farro to the skillet and stir for about 2 minutes to coat the grains. Then, gradually add the warm vegetable broth, one ladle at a time, stirring frequently. Allow the farro to absorb the liquid before adding more. Continue this process for about 25-30 minutes until the farro is tender but still has a slight bite.

Add the Vegetables
When the farro is almost done, add the seasonal vegetables to the skillet. Stir and cook for an additional 5-7 minutes until the vegetables are tender.

Finish with Creaminess
Once the farro and vegetables are cooked, remove from heat. Stir in the mascarpone cheese until melted and creamy. Add the pecorino romano cheese, salt, and black pepper. Mix well and adjust seasoning to taste.

Serve warm, garnished with additional pecorino romano if desired.
