Roast the Beets
Preheat the oven to 400°F (200°C). In a baking dish, layer a thick bed of salt to prevent the beets from touching the pan. Place the beets on top, then cover them completely with the remaining salt. Roast for about 45-60 minutes, until tender. Let cool, then peel and chill.

Prepare the Gorgonzola Mousse
In a mixing bowl, combine the gorgonzola cheese and heavy cream. Use a hand mixer to whip until light and fluffy. Adjust seasoning with black pepper to taste. Set aside.

Chop the Apples and Pistachios
Core and dice the green apples into small cubes. Roughly chop the toasted pistachios.

Assemble the Dish
Slice the chilled beets and arrange them on a serving plate. Drizzle with olive oil, then spoon the whipped gorgonzola mousse over the beets. Top with diced green apples and chopped pistachios for crunch.
