    Prepare the Pork Chops

    Season the pork chops with salt, pepper, and citrus zest. Let them rest for about 15 minutes.

    Set Up Breading Station

    In three separate bowls, place the flour, beaten eggs, and breadcrumbs. Dredge each pork chop in flour, dip in the egg, and coat with breadcrumbs.

    Pan Fry the Pork Chops

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the breaded pork chops and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and let rest on a paper towel.

    Prepare Grilled Lemon Butter

    Cut the lemon in half and grill it cut-side down in the skillet for about 2-3 minutes until charred. In a small saucepan, melt butter and add the grilled lemon juice.

    Assemble the Salad

    In a bowl, toss the watercress with a drizzle of olive oil, salt, and pepper.
