    Prepare the Dough

    In a large bowl, combine the all-purpose flour and salt. Gradually add the water while stirring until a dough begins to form. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Roll Out the Dough

    After the resting period, divide the dough into small balls about the size of a golf ball. Roll each ball out into thin circles on a floured surface.

    Prepare the Filling

    In a separate bowl, mix the chopped fresh herbs, olive oil, and black pepper. You can also add cheese or sautéed vegetables if desired.

    Assemble the Pieri

    Place a tablespoon of the filling on one half of each dough circle. Fold the other half over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.

    Cook the Pieri

    In a large pot of boiling salted water, cook the pieri for about 3-5 minutes or until they float to the surface. Remove with a slotted spoon and let drain.
