Limoncello Preparation

    Prepare the Lemon Zest

    Using a vegetable peeler, carefully peel the yellow zest from the lemons, avoiding the white pith underneath.

    Infuse the Alcohol

    In a large jar, combine the lemon zest with the grain alcohol. Seal tightly and let it infuse in a cool, dark place for 1 to 2 weeks.

    Make the Simple Syrup

    In a saucepan, combine water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Allow it to cool.

    Combine and Strain

    After the infusion period, strain the lemon zest from the alcohol using a fine mesh strainer. Combine the strained alcohol with the cooled simple syrup.

    Chill and Serve

    Refrigerate the limoncello for a few hours. When ready to serve, pour over crushed ice in a glass and garnish with fresh mint leaves.
