Cooking Instructions

  1. 1

    Prepare the Octopus

Bring a large pot of water to a boil. Add the octopus and cook for about 40-45 minutes until tender. Remove from water and let cool.

  2. 2

    Make the Vinaigrette

In a blender, combine sun-dried tomatoes, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth to create the vinaigrette.

  3. 3

    Grill the Octopus

Once the octopus has cooled, cut it into tentacles. Preheat a grill or grill pan over medium-high heat. Brush the octopus with chili oil and grill for about 3-4 minutes on each side until charred.

  4. 4

    Prepare the Fresh Tomatoes

Dice the fresh tomatoes and season with a little salt and pepper.

  5. 5

    Serve

On a serving plate, arrange the grilled octopus, drizzle with sun-dried tomato vinaigrette, and top with fresh tomatoes. Garnish with chopped parsley.
