Preparation and Grilling

    Prepare the Fish

    Clean and gut the branzino, leaving the head and tail intact. Rinse under cold water and pat dry with paper towels.

    Season the Fish

    Rub the outside and inside of the branzino with olive oil, salt, and black pepper.

    Preheat the Grill

    Heat your grill to medium-high heat.

    Grill the Fish

    Place the branzino on the grill and cook for about 6-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

    Prepare the Mignonette

    In a small bowl, mix together white balsamic vinegar, minced herbs (such as parsley, chives, and dill), salt, and pepper to taste.

    Prepare the Fennel

    Thinly shave the fennel bulb using a mandoline or sharp knife.

    Assemble the Plate

    Serve the grilled branzino on a plate, topped with shaved fennel and watercress, and drizzle with the herb mignonette.
