    Prepare the Dough

    In a large mixing bowl, combine the flour, water, salt, and active dry yeast. Mix until a shaggy dough forms, then let it rest for 30 minutes.

    Knead the Dough

    After resting, add 2 tablespoons of olive oil and knead the dough for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.

    Shape the Dough

    After the first rise, gently deflate the dough and transfer it to a greased baking sheet. Stretch it out to fit the pan, cover, and let it rise for another 1-2 hours.

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Create Dents and Toppings

    Using your fingers, make deep dimples all over the surface of the dough. Drizzle the remaining olive oil over the top and sprinkle with fresh rosemary.

    Bake

    Bake the focaccia for 20-25 minutes or until golden brown. Remove from the oven and let it cool slightly before serving.
