    Prepare the Potatoes

    Scrub the fingerling potatoes clean, then place them in a pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Smash the Potatoes

    Once cooked, drain the potatoes and let them cool slightly. Use the bottom of a glass or a potato masher to gently smash each potato until flattened but still in one piece.

    Fry the Potatoes

    In a large skillet, heat olive oil over medium-high heat. Carefully add the smashed potatoes to the skillet and fry until golden brown and crispy on both sides, about 4-5 minutes per side. Season with salt and black pepper.

    Fry the Rosemary

    In the same skillet, add the European butter and fresh rosemary. Allow the butter to melt and the rosemary to fry until crispy, about 2-3 minutes. Remove from heat.

    Garnish and Serve

    Arrange the fried potatoes on a serving platter. Drizzle the fried rosemary and melted butter over the potatoes, then sprinkle with chopped chives. Serve hot.
