Cannoli Preparation

    Make the Cannoli Shells

    In a large bowl, mix flour, sugar, cocoa powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolks and wine or vinegar until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Roll and Cut the Dough

    On a floured surface, roll out the dough to 1/8-inch thickness. Cut into circles (about 4 inches in diameter). Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

    Fry the Shells

    Heat oil in a deep fryer or large pot. Fry the wrapped tubes until golden brown. Remove and drain on paper towels. Let them cool before removing the shells from the tubes.

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. In another bowl, whip the heavy cream until stiff peaks form, then fold into the ricotta mixture until smooth.

    Fill the Cannoli

    Using a piping bag, fill each cannoli shell with the ricotta filling. Dust with additional powdered sugar if desired.
