Make the Pappardelle
In a large mixing bowl, combine flour and salt. Make a well in the center and add eggs. Gradually mix the flour into the eggs, kneading until a smooth dough forms. Wrap in plastic wrap and let rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into quarters. Roll each piece into thin sheets using a pasta machine or a rolling pin. Cut into wide strips (about 1 inch) to form pappardelle.

Prepare the Ragù
In a large skillet, heat olive oil over medium heat. Add the Calabrian chili paste and sauté for 1-2 minutes. Add ground beef and cook until browned, breaking it apart with a spoon. Reduce heat and simmer for 20 minutes.

Cook the Pappardelle
In a large pot of salted boiling water, cook the pappardelle for 3-4 minutes until al dente. Drain and reserve some pasta water.

Combine and Serve
Toss the cooked pappardelle with the ragù, adding reserved pasta water as needed for sauce consistency. Serve topped with housemade ricotta and fresh basil.
