    Prepare the Boudin

    Remove the casing from the boudin sausage and crumble it into a skillet. Cook over medium heat until browned and heated through, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper. In another skillet, heat olive oil over medium heat. Pour in the egg mixture and scramble until fully cooked, about 3-4 minutes.

    Assemble the Burrito

    Lay a tortilla flat on a plate. Spoon half of the cooked boudin onto the center, followed by half of the scrambled eggs and half of the shredded cheddar cheese. Roll the tortilla tightly to form a burrito. Repeat with the second tortilla.

    Serve with Couli

    Place the burritos on a plate and drizzle with roasted red pepper coulis. Optionally, sprinkle more cheese on top and serve immediately.
