Cooking Instructions

1

Prepare the Base

In a large pot over medium heat, add the diced onion, bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

2

Add the Garlic and Sausage

Stir in the minced garlic and sliced Andouille sausage. Cook for another 3-4 minutes until the sausage is browned.

3

Combine Other Ingredients

Add the shredded smoked duck, diced tomatoes, chicken broth, sliced okra, bay leaves, and Cajun seasoning to the pot. Stir well.

4

Simmer the Gumbo

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.

5

Season and Serve

Remove the bay leaves. Season with salt and pepper to taste. Serve the gumbo over cooked rice and garnish with chopped green onions.
