Prepare the Candied Bacon

Preheat your oven to 375°F (190°C). Place bacon on a baking sheet and sprinkle with brown sugar. Bake for 15-20 minutes until crispy. Let cool and chop into pieces.

Make the Aioli

In a bowl, combine mayonnaise, chevre, chopped fresh herbs, minced garlic, lemon juice, salt, and pepper. Mix well and set aside.

Cook the Patties

Divide the ground beef into two equal portions and form into balls. Heat a skillet over medium-high heat. Smash the balls down into patties and cook for about 3-4 minutes on one side, then flip, add cheese on top, and cook for another 2-3 minutes.

Prepare the French Fries

Peel and cut the potatoes into fries. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes. Drain on paper towels and season with salt.

Assemble the Burger

On the bottom half of the cornbread bun, spread a generous amount of herb & chevre aioli. Layer with romaine lettuce, a slice of heirloom tomato, the two smash patties, candied bacon, dill pickles, and finally the top half of the cornbread bun.

Serve

Serve the assembled burger with a side of french fries and ketchup.
