Make the Dough
In a large bowl, combine the all-purpose flour and salt. Create a well in the center and crack in the eggs and olive oil. Mix until a dough forms. Knead on a floured surface for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a skillet over medium heat, add a little olive oil and sauté the minced garlic until fragrant. Add the chopped mushrooms and cook until they are soft and the moisture has evaporated. Remove from heat, and let cool slightly. In a bowl, mix the sautéed mushrooms with ricotta, Parmesan, black pepper, and nutmeg.

Roll the Dough
After the dough has rested, divide it into four parts. Roll out one part into a thin sheet (about 1/16 inch thick) using a pasta machine or a rolling pin. Keep the other parts covered to prevent drying.

Fill the Ravioli
Place teaspoons of the mushroom filling on one half of the rolled-out dough, leaving space between each filling. Brush the edges with water, fold over the dough, and press firmly to seal around each filling. Cut out with a ravioli cutter or a knife.

Cook the Ravioli
Bring a large pot of salted water to a boil. Gently add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

Serve
Serve the ravioli with your favorite sauce, such as a simple marinara or a sage-butter sauce.
