Prepare the Cheese
Preheat your oven to 180°C (350°F). Grate the Menonita cheese and set aside.

Assemble the Queso Fundido
In a cast-iron skillet or oven-safe dish, layer half of the grated Menonita cheese at the bottom. Pour the tomatillo salsa over the cheese, then layer the remaining cheese on top.

Bake
Place the skillet in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Fry the Potatoes
While the cheese is baking, heat oil in a frying pan over medium heat. Add the shoe string potatoes and fry until golden and crispy. Drain on paper towels.

Serve
Once the cheese is ready, remove from the oven. Top with crispy shoe string potatoes and serve hot with corn tortillas on the side for dipping.
