Swordfish Al Pastor Taco Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Swordfish

Marinate the swordfish steaks in adobo sauce for at least 30 minutes.

  2. 2

    Cook the Pork Belly

Slow-cook the pork belly until tender, then sear it on high heat to create a crispy exterior.

  3. 3

    Grill the Sausage

Grill the sausage links until cooked through, then slice them into bite-sized pieces.

  4. 4

    Cook the Carne Asada

Prepare the carne asada by grilling it to your desired doneness and slicing it thinly.

  5. 5

    Prepare the Fillings

In a skillet, combine the refried beans and cooked potatoes until warmed through.

  6. 6

    Grill the Swordfish

Grill the marinated swordfish for about 4-5 minutes on each side until cooked through.

  7. 7

    Assemble the Tacos

Warm the corn tortillas. Layer each tortilla with a portion of swordfish, pork belly, sausage, carne asada, frijoles, and papas. Top with morita mustard, onion crema, and garnish with cilantro.

  8. 8

    Serve

Serve the tacos hot with lime wedges on the side.
