Steak Preparation

    Grill the Steak

    Preheat your grill using mesquite charcoal. Season the skirt steak with salt, black pepper, and olive oil. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Potato Preparation

    Boil the Potatoes

    In a pot of salted water, boil the baby potatoes until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Sauté the Potatoes

    In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes. Add the boiled potatoes, salt, and black pepper. Cook until golden and crispy, about 5-7 minutes. Garnish with fresh parsley.

Pickled Onions Preparation

    Make Pickled Onions

    Thinly slice the red onion and place in a jar. In a saucepan, combine white vinegar, sugar, and salt. Bring to a simmer, then pour over the onions in the jar. Let it cool and refrigerate for at least 30 minutes.

Bacanora Beans Preparation

    Cook the Beans

    In a saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until translucent. Add Bacanora beans, cumin, salt, and pepper. Cook for 10-15 minutes, stirring occasionally, until heated through.
