Method

Burger Preparation

  1. 1

    Form the Patties

In a bowl, form the K4 beef into two equal patties, season with salt and pepper.

  2. 2

    Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium-rare, adding the sharp cheddar cheese on top during the last minute to melt.

  3. 3

    Toast the Buns

While the patties are cooking, slice the brioche buns and toast them on the grill or in a toaster until golden brown.

  4. 4

    Assemble the Burger

On the bottom half of each bun, spread a tablespoon of chiltepin aioli, top with the burger patty, add caramelized onions, and finish with the top half of the bun.

Papas Al Disco Preparation

  1. 5

    Prepare the Potatoes

Dice the potatoes into small cubes.

  2. 6

    Cook the Potatoes

In a large skillet, heat olive oil over medium heat. Add the diced potatoes, minced garlic, salt, and pepper. Cook until the potatoes are golden and crispy, about 15-20 minutes.

Spicy Ketchup Preparation

  1. 7

    Mix the Ketchup

In a small bowl, combine the ketchup and hot sauce. Stir well to mix.
