    Prepare the Potatoes

    Wash and peel the Russet potatoes. Slice them thinly using a mandoline or sharp knife, aiming for about 1/8 inch thickness.

    Soak the Potatoes

    Place the potato slices in a bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Dry the Potatoes

    After soaking, drain the potato slices and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the potato slices in small batches to the hot oil. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate.

    Season the Chips

    While the chips are still warm, sprinkle them with salt, chili powder, and drizzle with lime juice. Toss gently to coat evenly.

    Serve with Hot Sauce

    Serve the chips warm with house hot sauce on the side for dipping.
