    Braised Rib Preparation

    Preheat the oven to 300°F (150°C). Season the K4 ribs with salt and pepper. Sear them in a hot skillet until browned on all sides. Transfer to a baking dish, cover with foil, and braise in the oven for 3 hours or until tender.

    Prepare Chiltepin Aioli

    In a blender, combine 1 cup of mayonnaise, 2-3 minced chiltepin peppers, garlic, lemon juice, and salt to taste. Blend until smooth and creamy.

    Assemble the Torta

    Once the ribs are done, shred the meat and place it on the bottom half of the Telera rolls. Top with lettuce, slices of avocado, and drizzle with chiltepin aioli. Pour tomato fume over the top and close the sandwich.

    Serve

    Serve the tortas with extra tomato fume on the side for dipping.
