Prepare the Filling
In a large saucepan, cook the whole lentils in water until tender, about 20 minutes. Drain and set aside.

Sauté the Vegetables
In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and jalapeno pepper, and sauté until softened, about 5 minutes. Stir in the minced garlic, ground cumin, ground coriander, salt, and black pepper. Cook for an additional 2 minutes.

Combine the Filling
Mix the cooked lentils with the sautéed onion mixture. Adjust seasoning if necessary and let cool.

Assemble the Sambusa
Take pastry dough and roll it out thinly. Cut into circles (about 4 inches in diameter). Place a tablespoon of the lentil filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges with a fork.

Fry the Sambusa
In a deep pan, heat the oil for frying over medium heat. Carefully add the sambusas and fry until golden brown on both sides, about 3-4 minutes. Remove and drain on paper towels.

Serve hot with sweet dipping sauce or kochkocha.
