Prepare the Meat

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

Add Aromatics

Stir in the minced garlic and grated ginger. Cook for an additional minute until fragrant.

Cook the Meat

Add the goat or lamb chunks to the pot. Brown the meat on all sides, about 5-7 minutes.

Incorporate Spices

Mix in the berbere spice, tomato paste, salt, and black pepper. Stir well to coat the meat.

Add Liquid

Pour in the water and bring to a boil. Reduce the heat, cover, and let it simmer for about 1.5 to 2 hours until the meat is tender.

Prepare Serving

When the meat is tender, stir in the torn injera pieces and cook for another 5 minutes. Serve hot with a side salad.
