1. Prepare the Ingredients

Chop the onion, garlic, and tomato. Set aside.

2. Sauté the Onion and Garlic

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute until fragrant.

3. Cook the Lamb

Add the lamb chunks to the pot. Season with salt and pepper. Brown the lamb on all sides.

4. Add Tomatoes and Sauce

Stir in the chopped tomatoes and tomato sauce. Add the fresh rosemary. Bring to a simmer.

5. Simmer the Stew

Cover the pot and reduce the heat to low. Let it simmer for about 30-40 minutes, or until the lamb is tender and cooked through. Stir occasionally.

6. Serve

Once the lamb is cooked, taste and adjust seasoning. Serve hot over pieces of injera.
