In a large bowl, mix the teff flour and salt together. Gradually add water while stirring to form a smooth batter. Cover and let it ferment at room temperature for 1-3 days until bubbly and slightly sour.

Heat a non-stick skillet or a large griddle over medium heat. Pour a ladle of the batter into the skillet and swirl to spread evenly. Cook for about 2-3 minutes until bubbles form and the edges lift. Remove and repeat with remaining batter.

Chop tomatoes and cucumbers. Toss with olive oil, lemon juice, salt, and pepper to taste.

In a pan, heat oil and add chopped greens. Sauté until wilted, season with salt and pepper.
