Calamari

Spicy Aioli

Method

Calamari Preparation

  1. 1

    Prepare the Dry Mix

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well and set aside.

  2. 2

    Prepare the Wet Mix

In another bowl, whisk together the eggs and milk until well combined.

  3. 3

    Coat the Calamari

Dip each calamari ring first into the wet egg mixture, allowing the excess to drip off, then coat it in the dry mix, pressing lightly to ensure the coating adheres. Set aside on a plate.

Frying

  1. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Calamari

Carefully add a few coated calamari rings to the hot oil, ensuring not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels. Repeat with the remaining calamari.

Spicy Aioli Preparation

  1. 6

    Mix the Aioli

In a small bowl, combine the mayonnaise, minced garlic (use a garlic press or finely chop), lemon juice, sriracha sauce, and salt to taste. Stir well until smooth and creamy.
