Preparing the Blackened Catfish

Mix the Spice Rub
In a small bowl, combine the paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, black pepper, and salt. Mix well to create a spice rub.

Prepare the Catfish
Pat the catfish fillets dry with paper towels. Rub each fillet generously with olive oil and then coat both sides with the spice rub, pressing it into the fish.

Rinse the Rice
Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed and the rice is tender.
