Prepare the Chicken

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Sear the Chicken

In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 6-7 minutes on each side or until golden brown and cooked through. Remove from skillet and let rest.

Roast the Garlic

Preheat the oven to 400°F (200°C). Wrap garlic cloves in aluminum foil and roast for 30-35 minutes until soft.

Cook the Potatoes

Peel and chop the Yukon gold potatoes into quarters. Boil in salted water until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves into the pot, add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Prepare the Vegetables

Chop the zucchini, bell pepper, and carrots into bite-sized pieces.

Sauté the Vegetables

In the same skillet used for the chicken, add olive oil and heat over medium heat. Add the chopped vegetables, season with salt and pepper, and sauté for about 5-7 minutes until tender but still crisp.
