Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let cool slightly.

    Whisk the Eggs

    In a separate mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and thick, about 5 minutes.

    Combine Mixtures

    Add the melted chocolate mixture and vanilla extract to the egg mixture. Gently fold using a spatula until fully combined, taking care not to deflate the mixture.

    Chill the Mousse

    Divide the mousse mixture into serving bowls or glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Whipped Cream Topping

    Prepare the Whipped Cream

    In a chilled mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.

    Top the Mousse

    Once the mousse is set, remove from the refrigerator and spoon or pipe the whipped cream over the top of each serving. Optionally, garnish with chocolate shavings or berries.
