Preparation of Cake

Preheat the Oven
Preheat your oven to 425°F (220°C).

Melt Chocolate and Butter
In a double boiler or microwave, melt the dark chocolate and unsalted butter together until smooth. If using a microwave, heat in 30-second intervals to prevent burning.

Whisk Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

Add Dry Ingredients
Sift in the all-purpose flour and add a pinch of salt. Gently fold the mixture until no dry flour remains, being careful not to overmix.

Add Vanilla
Stir in the vanilla extract until just combined.

Fill Ramekins
Evenly distribute the cake batter among the prepared ramekins, filling them about 3/4 full.

Bake the Lava Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will be soft.

Cool Slightly
Remove from the oven and let the lava cakes cool for 1 minute before inverting onto plates.

Top each lava cake with a scoop of vanilla ice cream immediately after inverting. Serve warm for the best molten chocolate experience.
