Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in the granulated sugar and continue mixing until well combined.

Add remaining ingredients
Mix in the sour cream and vanilla extract until fully incorporated. Add the eggs one at a time, mixing on low speed until just blended. Be careful not to overmix.

Combine and pour
Pour the cream cheese filling over the cooled graham cracker crust in the springform pan. Smooth the top with a spatula.

Bake the cheesecake
Bake in the oven at 325°F (160°C) for about 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

Cool and refrigerate
Remove the cheesecake from the oven and let it cool at room temperature for about 2 hours before refrigerating for at least 4 hours, preferably overnight, before slicing and serving.
