Zucchini Noodles Preparation

    Spiralize the Zucchini

    Using a spiralizer, spiralize the medium zucchinis into noodle shapes. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips.

    Salt the Zucchini Noodles

    Place the spiralized zucchini in a colander and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.

Marinara Sauce Preparation

    Sauté Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic cloves and sauté for about 1-2 minutes until fragrant, being careful not to burn them.

    Add Tomatoes and Seasonings

    Pour in the 28 oz can of crushed tomatoes. Stir in dried oregano, dried basil, salt, black pepper, and sugar. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally until it thickens slightly.

Combine and Serve

    Drain Zucchini Noodles

    After 10 minutes, rinse the zucchini noodles under cold water and gently pat them dry with a paper towel.

    Toss Zucchini with Marinara Sauce

    Add the drained zucchini noodles to the skillet with the marinara sauce. Toss gently to coat the noodles evenly in the sauce.

    Serve with Nutritional Yeast

    Plate the zucchini noodles and top with 1 tablespoon of nutritional yeast. Optionally, garnish with fresh basil leaves.
