Prepare the Chicken

Cut the chicken breasts into bite-sized pieces, about 1 inch each.

Set Up Breading Station

In one bowl, combine flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together the egg and milk.

Bread the Chicken

Dredge each chicken piece in the flour mixture, then dip it in the egg mixture, and finally coat it in the flour mixture again. Ensure each piece is evenly coated.

Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the chicken pieces in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Prepare the Slaw

In a large bowl, combine shredded carrots, halved grapes, and sliced red cabbage.

Make the Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.

Combine Ingredients

Pour the dressing over the slaw mixture and toss until everything is well coated. Adjust seasoning with salt and pepper to taste.

In a small bowl, whisk together soy sauce, lime juice, honey, sriracha, minced garlic, and grated ginger.

On a serving plate, place a generous serving of carrot-grape slaw. Top with crispy chicken bites, drizzle with Thai sauce, and garnish with chopped scallions.
