    Prepare the Potatoes

    Wash and scrub the russet potatoes thoroughly. Slice them thinly using a mandoline or a sharp knife to ensure even cooking.

    Soak the Potato Slices

    Place the sliced potatoes in a bowl of cold water and soak for 30 minutes. This helps to remove excess starch and ensures crispiness.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potato Chips

    Carefully add a handful of potato slices to the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
