Preparing the Quinoa

    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork.

Making the Burger Patties

    Mash the Black Beans

    In a large bowl, drain and rinse the black beans. Using a fork or potato masher, mash the black beans until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the cooked quinoa, breadcrumbs, egg, minced garlic, diced onion, cumin, chili powder, salt, and black pepper to the bowl with the mashed black beans. Mix well until all ingredients are combined.

    Form Patties

    Divide the mixture into four equal portions and shape each portion into a patty.

    Cook the Patties

    Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.

Assembling the Burgers

    Toast the Buns

    While the patties are cooking, toast the burger buns in a toaster or on a grill until golden brown.

    Layer the Ingredients

    On the bottom half of each toasted bun, place a lettuce leaf, followed by a burger patty, a slice of tomato, and a few slices of avocado. Top with the other half of the bun.
