Method

Veal Tenderloin

    Season and Sear

    Preheat the oven to 200°C (400°F). Season the veal tenderloin with salt, black pepper, garlic, rosemary, and thyme. Heat olive oil in a skillet over medium-high heat and sear the tenderloin on all sides until golden brown, about 3-4 minutes per side.

    Roast

    Transfer the seared tenderloin to a baking dish and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 57°C (135°F) for medium-rare. Remove from the oven and let it rest for 10 minutes before slicing.

Sweetbreads

    Prepare Sweetbreads

    Soak the sweetbreads in cold water for at least 2 hours. Drain and rinse thoroughly. Blanch sweetbreads in boiling water for 5 minutes, then transfer to ice water to cool. Remove the membrane and any fat.

    Sear Sweetbreads

    In a skillet, melt butter over medium heat. Season the sweetbreads with salt and black pepper, then sear them for about 4-5 minutes on each side until golden brown. Remove from heat and keep warm.

Red Kuri Squash

    Roast Squash

    Toss the cubed red kuri squash with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven (alongside the veal) for 25-30 minutes, or until tender and caramelized.

Brussels Leaves

    Prepare Brussels Sprouts

    In a bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper. Spread them on a separate baking sheet.

    Roast Brussels Sprouts

    Roast the Brussels sprouts in the oven for about 20 minutes or until they are tender and slightly charred.

Hazelnut Tuile

    Make Tuile Batter

    Preheat the oven to 180°C (350°F). In a bowl, mix melted butter, sugar, and egg whites until combined. Gradually fold in finely chopped hazelnuts and all-purpose flour until a smooth batter forms.

    Bake Tuiles

    Drop small spoonfuls of the batter onto a lined baking sheet, spreading them thinly. Bake for 10-12 minutes or until golden brown. Allow to cool and set.

Cider Jus

    Prepare Cider Jus

    In a saucepan, combine apple cider and chicken stock. Bring to a boil and reduce to a simmer until reduced by half. Whisk in butter, salt, and black pepper to taste.
