Prepare the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, and cold unsalted butter. Mix until crumbly.

Add Egg Yolk and Water
Add the egg yolk and cold water. Mix until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.

Roll Out the Dough
Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to fit a 9-inch tart pan.

Blind Bake the Crust
Place the rolled dough in the tart pan, prick the bottom with a fork, and line with parchment paper. Fill with pie weights and bake for 15 minutes. Remove parchment and weights, then bake for an additional 10 minutes until golden.

Heat Milk
In a saucepan, heat the whole milk and half of the granulated sugar over medium heat until it starts to steam but not boil.

Mix Egg Yolks and Sugar
In a bowl, whisk together the egg yolks, remaining sugar, and cornstarch until smooth.

Cook the Cream
Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil. Remove from heat and stir in vanilla extract and butter.

Cool the Cream
Transfer the pastry cream to a bowl, cover with plastic wrap touching the surface, and refrigerate until chilled.
Assembling the Tart

Fill the Tart Crust
Once the pastry cream is chilled, fill the cooled tart crust with the pastry cream, smoothing the top with a spatula.

Arrange the Fruits
Top the pastry cream with seasonal fruits, arranging them creatively.

Glaze the Tart
In a small saucepan, heat apricot jam with a little water until melted. Brush the glaze over the fruits for a shiny finish.

Refrigerate the tart for at least 1 hour before serving to allow the flavors to meld.
