Fried Strawberries

Prepare the Strawberries
Wash the strawberries thoroughly under cold water. Pat them dry with a paper towel. Remove the stems and cut the strawberries in half.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the ice-cold water until you have a smooth batter.

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Strawberries
Dip each strawberry half into the batter, allowing excess batter to drip off. Carefully place them into the hot oil and fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Chocolate Sauce

Make the Chocolate Sauce
In a small saucepan over low heat, combine the dark chocolate chips and heavy cream. Stir until melted and smooth. Add sugar and stir until dissolved. Remove from heat and set aside.
Anglaise Sauce

Cook the Anglaise
Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in vanilla extract. Strain through a fine sieve to remove any cooked egg bits. Let cool.
Berry Coulis

Make the Coulis
In a blender, combine the mixed berries, sugar, and lemon juice. Blend until smooth. Strain through a fine sieve to remove seeds, if desired. Chill before serving.
