Fried Green Tomatoes

Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let sit for about 10 minutes.

Breading Station
Set up a breading station with three bowls: one with all-purpose flour, one with buttermilk, and one with cornmeal mixed with black pepper.

Fry the Tomatoes
Dip each tomato slice in flour, then buttermilk, and finally cornmeal. Heat vegetable oil in a skillet over medium-high heat and fry the tomatoes until golden brown on both sides. Drain on paper towels.
Crab Cakes

Mix the Ingredients
In a large bowl, combine crab meat, mayonnaise, Dijon mustard, eggs, Old Bay seasoning, breadcrumbs, salt, and black pepper. Mix gently to avoid breaking the crab meat.

Form the Cakes
Form the mixture into patties, about 1 inch thick. Place on a baking sheet and refrigerate for at least 30 minutes.

Cook the Crab Cakes
In a skillet, heat vegetable oil over medium heat. Cook the crab cakes for about 4-5 minutes on each side until golden brown. Drain on paper towels.

Pickle the Onions
Slice the red onion thinly and add to the boiling pickling solution. Remove from heat and let cool. Add pickled okra after cooling.

Prepare the Dressings
In separate bowls, prepare the chipotle aioli, buttermilk dressing, and remoulade according to your favorite recipes or purchased from the store.
Greens

Prepare the Greens
Wash and dry the artisanal greens. Set aside for serving.
