Chocolate Mousse

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a double boiler or in the microwave in 20-second intervals until smooth. Stir to combine and set aside to cool slightly.

Combine Chocolate and Egg Mixture
Gently fold the melted chocolate mixture into the egg mixture until fully incorporated. Be careful not to deflate the eggs.

Chill the Mousse
Pour the mousse mixture into serving cups or bowls and refrigerate for at least 2 hours, or until set.
Whipped Cream Topping

Prepare Whipped Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

Top the Mousse
Once the mousse is set, remove from the refrigerator and top each serving with a generous dollop of whipped cream.
