Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Dry Ingredients
In a large mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Calamari
Dip each calamari ring first into the egg mixture, letting the excess drip off, then coat it in the flour mixture. Ensure an even coating.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying them for about 2-3 minutes or until golden brown. Do not overcrowd the pan.

Drain the Calamari
Use a slotted spoon to transfer the fried calamari to a plate lined with paper towels to remove excess oil.

Sauté the Garlic
Add the minced garlic to the oil and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Mix well.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Once the sauce has thickened slightly, remove it from heat and stir in the chopped fresh parsley.
