Method
Preparation of Vegetables
Trim and Cut French Beans
Wash the French beans, trim the ends, and cut them into 2-inch pieces.
Prepare Sweet Peppers
Wash the sweet peppers, remove the seeds, and cut them into small squares.
Diced Tomatoes
Wash the tomatoes, remove the stems, and dice them into small pieces.
Cooking Risotto
Sauté Vegetables
In a large pan, heat a tablespoon of olive oil over medium heat. Add the chopped sweet peppers and French beans, sautéing for about 5 minutes until tender.
Add Arborio Rice
Add the Arborio rice to the pan, stirring well to coat the rice with the oil and vegetables for about 2 minutes.
Add Vegetable Broth
Gradually add the vegetable broth, one ladle at a time, stirring continuously. Wait until the liquid is mostly absorbed before adding more broth. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
Incorporate Tomatoes
Once the rice is nearly cooked, stir in the diced tomatoes and cook for an additional 5 minutes.
Making Tomato Vinaigrette
Prepare Vinaigrette
In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, chopped fresh basil, salt, and black pepper until well combined.
Serving
Plate the Dish
Serve the tomato risotto topped with sautéed French beans and sweet peppers. Drizzle the tomato vinaigrette over the top before serving.
