Prepare the Patty

In a large bowl, combine the ground short rib and brisket. Season with salt and pepper, then form into 4 patties.

Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pan.

Cook the Patties

In the same skillet, cook the beef patties for about 4-5 minutes on each side until desired doneness. Add a slice of Muenster cheese on top of each patty during the last minute of cooking to melt.

Prepare Beer Battered Chicken

In a bowl, mix flour with beer until smooth. Cut the chicken breast into strips, dip into the batter, and fry in hot oil until golden brown and cooked through. Drain on paper towels.

Make Potato Pancakes

Grate the potatoes, squeeze out excess moisture, and mix with salt and pepper. Heat oil in a pan, form potato mixture into pancakes, and fry until golden and crispy on both sides. Drain on paper towels.

Assemble the Saint

On a plate, place a crispy potato pancake as a base. Top with a beef patty, followed by a piece of beer-battered chicken, a slice of bacon, and a generous smear of Creole mustard. Drizzle with hot gravy before serving.
