Cooking Instructions

  1. 1

    Prepare the Short Ribs

Season the short ribs generously with jerk seasoning, salt, and black pepper.

  2. 2

    Sear the Meat

In a large heavy pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

  3. 3

    Cook Aromatics

In the same pot, add the chopped onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.

  4. 4

    Deglaze and Braise

Add the beef broth and tomato paste, scraping up any browned bits from the bottom of the pot. Return the short ribs to the pot, cover, and reduce heat to low. Braise for about 3 hours, or until the meat is tender and falls off the bone.

  5. 5

    Cook the Tortellini

In the last 10 minutes of the short ribs cooking, bring a separate pot of salted water to a boil. Cook the four cheese tortellini according to package instructions until al dente. Drain and set aside.

  6. 6

    Serve

Once the short ribs are done, shred the meat if desired. Serve the jerk braised short ribs over a bed of four cheese tortellini and garnish with fresh cilantro.
